Inspired in equal parts by American heritage, history, love of great cooking, friendship and epic culinary journeys across the USA, Lincoln Chilli is a passion project between friends Matt Glassman, Dan Gibney and Chef Christian.

After selling out two private events, Lincoln Chilli is proud to introduce to Grub Club a delectable degustation of authentic American cooking, craft beers, wines and cocktails.

Showcasing the nuanced sophistication and complex flavours of three of our favourite chilli recipes, our supper club draws inspiration from 239 years of American culinary diaspora.

For those of you new to US-Chilli (or “Chili” if you’re American), it’s a long way from the Chilli con Carne you may have tasted. Nor is it a topping for French fries and hot dogs. And contrary to popular perception, it’s not particularly hot (unless you want it to be!).
Chilli is an elegant and complex dish as unique as America itself. Each recipe being different, chilli varieties are endless, each bowl telling the story of the land and people who settled it, every dish a unique culinary creation. Recipes showcase a range of slow cooked meats, vegetables, spice blends, textures and terroirs. It is a dish cooked and enjoyed by Presidents, acclaimed chefs, cowboys, celebrities and families alike. It is a dish which will continue to evolve with time.

Exclusively for Grub Club we are proud to introduce three delicious chilli dishes. Introducing Matt’s own jealously guarded 80 year old family recipe, then moving on to a sweeter style inspired by Greek Immigrants in Southern Ohio and finally a funky modernist vegetarian style from Berkeley, California, Lincoln Chilli will take you on uniquely gastronomic journey across 3,000 miles of America.

But it’s not just about the Chilli! Our carefully curated order of play introduces the dinner with a delicious welcome cocktail before taking you through a selection of starter dishes which serve up a modern twist on rustic American cuisines, then moving seamlessly on to the Chilli selection, before concluding with a traditional classic dessert and bourbon digestif. And the experience wouldn’t be complete without a handpicked selection of American craft beers, wines and bourbon whiskies available from our table-bar service.
